The exploitation of high pastures, which is organized according to rules of communal ownership, is a distinct feature of the human landscape of the mountains of Trentino. The first of the four rooms illustrates the structure of the malga: pastureland + dairy + stables. There follows: the casèl proper, where in wide buckets milk is left to rest so that cream may come to the surface. Churning of butter: various forms of churns. Then the dairy proper, with the great cauldron for the processing of milk, on a turnable tackle, known as mùssa. Accessory implements: rennet and dairy thermometer, stirring sticks. Wharehouse of the dairy: dripping planks, rounds wooden bands for shaping cheeses, butter moulds.
